These Christmas tree farm photos are some of my all time favorite, and although they are from last year, I didn’t have this blog yet so I thought I’d share a bunch of them this year. I hope you enjoy them as much as I do! 🙂^He got stuck!!…or “guck” as they call it these days.^I had completely forgotten about how they used to just randomly start clapping together all the time until I saw this picture! It makes me sad to realize a memory I thought was so strong and that I thought I would always remember had already slipped away from me.^I guess these bark scraps were his pick for our tree…he hadn’t quite got the hang of it yet 😉I can’t believe how tiny they look! It’s amazing how much they grow in a year, makes me little sad looking through these, but also so very thankful.
A Gluten Free, Dairy Free, Chocolate Chip Almond Butter Oat Cookie Recipe and Baking Day with the Twins, Enjoy!It’s a bold title, I know, but I stand behind it 100%. These are my families all time favorite cookie recipe, and if we had to choose just one cookie to eat for the rest of our lives, all dietary restrictions aside…These. Would. Be. It. (the hubs agrees, I checked before I wrote that 🙂 ) We’ve actually made them 7 times in the past month alone, and a few of those times were double batches! ( it’s the holidays so that’s okay, right?)…and I will confess, I’ve eaten 6 in one sitting <–this is saying a lot people, they are THAT good.
This recipe was originally a peanut butter cookie recipe given to me by my sister-in-law (thanks Carrie!), which was also really good, but since we can’t have legumes, I made a few changes and came up with these. We personally love them better than the original peanut butter version! Thank goodness because anything peanut butter and chocolate is a sure winner in my book. Finally, I’ve found something that makes me feel like I’m not missing out!
I’ve tried this recipe with several different kinds of almond butter, and my absolute favorite is Justin’s. Although, with this batch of cookies my jar of almond butter was oddly dry so they turned out a little different, but you want a smooth and thick almond butter. Do not use fresh ground out of the machine, this recipe won’t work with that kind. I also love MaraNatha and Kirkland brand from Costco if you can’t find Justin’s.
