BEST EVER Chocolate Chip Almond Butter Oat Cookies {Gluten Free, Dairy Free}
It’s a bold title, I know, but I stand behind it 100%. These are my families all time favorite cookie recipe, and if we had to choose just one cookie to eat for the rest of our lives, all dietary restrictions aside…These. Would. Be. It. (the hubs agrees, I checked before I wrote that 🙂 ) We’ve actually made them 7 times in the past month alone, and a few of those times were double batches! ( it’s the holidays so that’s okay, right?)…and I will confess, I’ve eaten 6 in one sitting <–this is saying a lot people, they are THAT good.
This recipe was originally a peanut butter cookie recipe given to me by my sister-in-law (thanks Carrie!), which was also really good, but since we can’t have legumes, I made a few changes and came up with these. We personally love them better than the original peanut butter version! Thank goodness because anything peanut butter and chocolate is a sure winner in my book. Finally, I’ve found something that makes me feel like I’m not missing out!
I’ve tried this recipe with several different kinds of almond butter, and my absolute favorite is Justin’s. Although, with this batch of cookies my jar of almond butter was oddly dry so they turned out a little different, but you want a smooth and thick almond butter. Do not use fresh ground out of the machine, this recipe won’t work with that kind. I also love MaraNatha and Kirkland brand from Costco if you can’t find Justin’s.

Best Ever Chocolate Chip Almond Butter Oat Cookies {Gluten Free, Dairy Free}
Ingredients
- 1 Cup Almond Butter (Justin's and Trader Joe's brands work great, fresh ground will not work)
- 3/4 Cup Coconut Sugar
- 3/4 Cup Gluten Free Oats
- 1 Large Egg
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Sea Salt
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Almond Extract
- 3/4 Cup Semi-Sweet Chocolate Chips (make sure they do not contain dairy if you want your recipe to be dairy free, we like Enjoy Life brand)
Instructions
- Preheat oven to 350 degrees
- Place everything in a Kitchenaid mixing bowl
- Mix on low pulses until combined, about 30 seconds
- Use a 2" ice cream scoop to form balls, fill scoop and scrape off excess so they are flat on the bottom
- Place cookies on cookie sheet, you should be able to fit all 12. Do not flatten, their shape is a big part of what makes them so good! 🙂
- Bake 10 minutes
- Allow to cool and enjoy! I love them best the next day when they have completely set up
