Paleo Bacon Jam
The BEST Paleo Bacon Jam! Low in sugar but full of flavor! Put it on crackers, a burger, or your favorite roasted vegetables!
If you like bacon jam (not sure who doesn’t), but aren’t a fan of the sticky sweet versions, this recipe is for you! It’s low in sugar, with none of the refined stuff, and full of flavor. I made this for Thanksgiving (we put it on our turkey as well as plantain crackers w/cheese) and now we are enjoying the leftovers on anything and everything we can think of. It’s the perfect thing to have on hand in the fridge for adding loads of flavor to a quick weeknight meal (or breakfast!) .
12 WAYS TO EAT BACON JAM:
- Put it on EVERYTHANG. HA. J/K…but not really.
- Crackers and cheese
- Toss with roasted brussel sprouts
- Spread on a plate and top with roasted root veg, or any other favorite roasted veggies, add a couple of fried eggs and you got one delicious, super easy meal!
- Mix into dressings
- Add to mac and cheese
- Top Baked chicken
- Top a steak and add a bit of blue cheese, so good
- Spread it on a burger, sandwich or toast
- Mix into a frittata or scramble
- Top a waffle
- Add it to pasta

- 4 large Onions, diced
- 1 pack Hempler's bacon, sliced into pieces
- 1/3 cup Thick, high quality balsamic vinegar
- 1/3 cup Bone broth (I also added some of the solidified fat)
- 1/4 cup Strong brewed coffee
- 1/4 cup Coconut sugar
- 1 tbsp Coconut aminos
- 2 tsp Yellow mustard seeds
- 1 tsp Dried oregano
- 1/2 tsp Fresh thyme
- 1 1/2 tsp Real salt
- 1 tsp Fresh black pepper

Add bacon to a large heavy bottom pot and cook until browned and crisp

Add in the rest of the ingredients and cook on low heat for about 2 hours, stirring occasionally, until jam is thick and dark in color

Makes about 4 cups, enjoy on everything!
