Grain Free Plantain Crackers with Everything Bagel Seasoning

Grain free plantain crackersAround here we LOVE us some plantains, they’re super cheap, allergen friendly, versatile, provide prebiotic starch to your diet…and well, they also make one damn good cracker. You may have tried plantain crackers from the web before…and almost broke a tooth (or was that me?), I assure you these are not those. These plantain crackers have the perfect amount of crispy crunchiness, loads of flavor, and my kids prefer them over store-bought (that’s saying a lot people!).

The Recipe:

  • Make sure you use a GREEN plantain, not the ripe yellow ones, otherwise you’ll have a big mess and you won’t be getting that prebiotic starch I mentioned earlier.
  • It’s best to use a neutral flavored oil here such as avocado oil, coconut oil takes over flavor wise so I would skip it…unless you like that sort of thing.
  • If you have discount grocers in your area (like Grocery Outlet for West Coast peeps) they are a great place to check for more expensive specialty items like cassava flour. I found mine for a fraction of the price and bought 4 huge bags, they’ve lasted in my cupboard for more than a year now.
  • I have not tried this recipe using an egg substitute, but I imagine a flax egg would work well here using the boiling method. If you try this method and it works out, please let me know in the comments!
  • If you don’t have everything bagel seasoning (or like it), other flavors such a yellow curry, ranch seasoning, nutritional yeast, Italian seasoning, etc. also work great! Hint: if you do try this flavor, they go great with a bit of cream cheese/vegan cream cheese, just as a bagel would😉
  • If you enjoy the taste of sesame, you can sub some of the oil for sesame oil as I’ve done here, or just use all avocado.
  • It’s important to remember, because each plantain will vary a bit in size and ripeness, your crackers will turn out a touch different each time.  After making these a few times you will get a better feel for the dough and know when to add just a smidge of extra oil or a little more flour, but regardless of whether or not you do, they will always be delicious😁

I’m always trying to find ways to incorporate natural learning into our daily lives so my kids never feel like I’m forcing them to sit through lessons during the day, cutting these crackers into letter shapes for our summer camping trip worked out perfectly. My kids thought it was super fun and it gave them something else to do at lunch! Even my hubs and I joined in, I mean, do we ever really grow out of playing with our food?😋 I used these letter shaped cookie cutters and planned out a few words to cut out in advance just to make sure we could spell a few relevant things on our trip, and then I let me kids choose the rest. These would also work great for fruit and veggies if you don’t have time to whip up crackers!😉 Enjoy!

Our family's favorite crispy, crunchy, and totally addicting grain free plantain cracker recipe. A great way to get in some prebiotic starch! And you can even cut them into letters for a fun way to teach your kids the alphabet!

Ingredients
  • 1 medium Green plantain, peeled and sliced
  • 3 tbsp Avocado oil
  • 1 tbsp Sesame oil (the toasted variety works great)
  • 1 Egg white
  • 1 tbsp Apple cider vinegar
  • 1/2 cup Almond flour, fine ground
  • 1/2 cup Cassava flour
  • 3 tbsp Everything bagel seasoning (such as Trader Joe's brand)
  • 1 tbsp Ground flax meal
  • 1/2 tsp Baking soda
Instructions
  1. Place sliced plantain, avocado oil, egg white, and apple cider vinegar into a blender or food processor and blend until smooth and no chunks remain.

  2. Add remaining ingredients to a separate bowl and mix well.

  3. Add pureed plantain mixture into bowl with dry ingredients and mix until fully incorporated.

  4. Cover with plastic wrap and let rest in fridge for one hour.

  5. When ready to bake, preheat over to 350 degrees.

  6. Cut a piece of parchment the size of your sheet pan and lay on an open work surface, place dough on top of parchment and start by shaping/flattening it into a rectangle as much as you can with your hands. Roll out dough as thin as possible (about 1/8" is perfect) until dough is evenly spread to all edges of the paper (you shouldn't really see the paper underneath anymore). If your dough sticks a bit or cracks, and it most likely will, just press it back together and dust a small amount of cassava flour onto your rolling pin and keep working it until it's all rolled out.

  7. Place into preheated oven and bake for 5 minutes, after 5 minutes pull it back out and cut into desires shapes such as easy squares or alphabet letters.

  8. Place back in the oven for 20 minutes, after 20 minutes flip crackers over and place back in oven for about 10 more minutes, or until crackers are golden brown and crisp (they will crisp up even more as they cool).

  9. Once cooled, grab your favorite cracker dip and enjoy! Hint: since these are bagel flavor, they go great with cream cheese/vegan cream cheese! Store any leftovers in an airtight bag or container. These will last well for several days...if you don't eat them all first!😁
