Our family's favorite crispy, crunchy, and totally addicting grain free plantain cracker recipe. A great way to get in some prebiotic starch! And you can even cut them into letters for a fun way to teach your kids the alphabet!
Place sliced plantain, avocado oil, egg white, and apple cider vinegar into a blender or food processor and blend until smooth and no chunks remain.
Add remaining ingredients to a separate bowl and mix well.
Add pureed plantain mixture into bowl with dry ingredients and mix until fully incorporated.
Cover with plastic wrap and let rest in fridge for one hour.
When ready to bake, preheat over to 350 degrees.
Cut a piece of parchment the size of your sheet pan and lay on an open work surface, place dough on top of parchment and start by shaping/flattening it into a rectangle as much as you can with your hands. Roll out dough as thin as possible (about 1/8" is perfect) until dough is evenly spread to all edges of the paper (you shouldn't really see the paper underneath anymore). If your dough sticks a bit or cracks, and it most likely will, just press it back together and dust a small amount of cassava flour onto your rolling pin and keep working it until it's all rolled out.
Place into preheated oven and bake for 5 minutes, after 5 minutes pull it back out and cut into desires shapes such as easy squares or alphabet letters.
Place back in the oven for 20 minutes, after 20 minutes flip crackers over and place back in oven for about 10 more minutes, or until crackers are golden brown and crisp (they will crisp up even more as they cool).
Once cooled, grab your favorite cracker dip and enjoy! Hint: since these are bagel flavor, they go great with cream cheese/vegan cream cheese! Store any leftovers in an airtight bag or container. These will last well for several days...if you don't eat them all first!😁
