A healthy, NO BAKE(!), gluten free, refined sugar free, vegan twix ball!!! So easy to make and SO HARD TO STOP EATING!!! Taste even better frozen!
Add everything to a food processor and pulverize until well combined and smooth. Alternatively, if you don't own a food processor you can chop the dates into a paste on a cutting board and then mix everything in a standing mixer.
Cover a tray or small sheet pan with parchment paper.
Use a spoon to scoop up a bit of the date caramel and press around a piece of mochi, roll between your hands into a ball shape and place on tray, continue until caramel is gone.
Place tray in freezer for about 30 minutes, or until caramel layer is firm.
In a small saucepan, combine chopped chocolate and coconut oil, melt over very low heat stirring constantly.
Using a fork, dip twix balls into chocolate and place back on tray, sprinkle with a bit more flaky sea salt if desired. Continue until all the twix balls are dipped.
These taste AMAZING frozen and they are so hard to stop eating! Enjoy!
