Keto Hidden Vegetable Fudgesicles {1.8g net carbs}
Hidden vegetable cauliflower fudge pops, dairy free, keto, and no added sugar! Super creamy and fudgy with only 1.8g net carbs per serving!

Now here’s a fudge pop I have no problem letting my kids eat for breakfast. With 6 oz of hidden cauliflower and no added sugar, I’ll even let them have two! Heck, sometimes I’ll even throw some avocado in the batch just to make sure they’re eating that too🙃


I’ve been using these zombie Popsicle molds all summer long, but now that Fall is almost upon us they’re seeming more appropriate…I’m sure they’ll make their appearance for Halloween as well, I might need to hide some beets in those ones for a little veggie zombie blood…we’ll see if my kids still eat them😆
My kids had a hard time eating the fudgesicle off the ribs (what a strange thing to write), so I made a few using sucker sticks to make it easier for them, plus they were a little weirded out by them…rightfully so. You could also use push pop molds if you have them, or even ice cube trays.


Cauli Fudge Pop Ingredients:
- The main ingredient/hidden veggie in these is steamed cauliflower, I like to steam a head of trimmed florets every week and keep it in the fridge so I can make these in a pinch. Just trim off the florets and steam in a steamer basket for about 10 minutes, or until tender, cool and place in a sealed container in the fridge. Alternately, you could possibly buy a frozen steamer bag for you microwave, but I haven’t tried this.
- I used a half tbsp of gelatin here to soften the texture, you can leave this out to make them vegan if you wish, they will freeze firmer but still be delicious.
- To make these keto without using sugar alcohols (we avoid those), I used stevia drops, but you can sub your preferred sweetener in its place. I have used 2-3 tbsp of raw honey with a dash of vanilla extract for my kids and they told me “it was the bomb”!
- Occasionally I add 2 oz of fresh avocado if I have it on hand, you gotta pack in even more nutrients where you can!💚

- 6 oz steamed cauliflower
- 1/2 cup coconut cream (Trader Joe's is great!)
- 1/4 cup coconut oil, melted
- 2 tbsp cocoa powder
- 1 heaping tbsp sunbutter
- 1/2 tbsp gelatin*
- 1/2 tsp flaked maldon sea salt
- 25 drops vanilla creme stevia
- 25 drops english toffee stevia

Start by steaming 6 oz of cauliflower florets for about 10 minutes, or until tender. I usually steam the florets from an entire head at the beginning of the week and keep it in my fridge to have on hand (I make these a lot!)

Add the steamed cauliflower and the rest of the ingredients to a high powered blender and blend until smooth, scraping down sides as needed.

Pour into desired Popsicle mold and place in freezer until firm, about 3-4 hours. I usually have just enough to make 4 Popsicles, but you may get a different amount depending on the size of your mold.
*You can omit this to make them vegan, however they will freeze firmer, but still be delicious.
