Paleo Apple Pie Goblin + Witch Finger Cookie Dough Bites

We LOVE making themed holiday treats in our house, and Halloween is no exception! It’s fun to come up with ways to make things without all the junk, my kids get really excited about it and start shouting out ideas rapid fire when we are in “creation mode”, it’s awesome.

So, I’m super excited to share our favorite Halloween creation we’ve made this year, these spooky (his and hers, because I have a boy and a girl and things must be fair) Goblin + Witch fingers!!! They turned out so real!!😱 For whatever reason, my son Stormy will only eat the girl witch fingers …but I assure you the Goblin fingers are equally delicious🙃 Let’s get started!

Paleo Halloween Treats

I have been making different flavors of bliss balls/energy balls every week and most recently I’ve been making an apple pie flavor for fall (yum!). So this week I tossed out the idea of molding our bliss balls into finger shapes for Halloween to my kids and they were stoked! We added some spirulina for color, and snipped some of those dried apples for fingernails, and the apple chunks mixed in ended up looking like warts! Perfect!😆

These Goblin + Witch fingers hold up nice, especially if you chill them a bit, and they taste just like an apple pie spiced cookie dough! They are also paleo, which means they have no added cane sugar, no food dyes, no artificial flavors, or any of that other junky stuff. We eat these for breakfast around here and we don’t feel bad about it, because there’s no reason to! Hooray for healthy Halloween treats🙌

If you can’t get past the whole eating a finger thing (I’ve gotten a few comments😂), just scoop them into balls for a grab and go snack, still taste great, no hard feelings.

Paleo Finger Cookie Ingredients:

  • Almond flour- A blanched and finely ground brand works best, you can sub half with tigernut flour for a more graham crackery taste.
  • Cashew butter- We used a very thick brand (Justin’s), if you use a runnier nut butter you may need to add more flour but I haven’t tested this out. You could also sub almond butter.
  • Collagen peptides- This adds protein and really helps hold the dough together. If you are vegan, tigernut flour would work well as a substitute.
  • Butter- This helps give it that apple pie taste, but if you don’t tolerate butter, mct oil or melted coconut oil also work great!
  • Spirulina- Adds that creepy color! As well as a ton of extra nutrients, I also love the way it tastes in these, but you could leave it out and these finger treats would still look great!

Ingredients
  • 1 cup Almond flour
  • 2/3 cup Cashew butter (a thick brand)
  • 1/4 cup Collagen peptides
  • 1/4 cup Raw honey
  • 2 tbsp Butter, softened (or mct oil/melted coconut oil)
  • 2 tsp Spirulina powder (for color)
  • 2 tsp Toasted cinnamon (regular is fine)
  • 1/4 tsp Allspice
  • 1/2 tsp Flaky sea salt
  • 1 tsp Vanilla Extract
  • 1/2 cup Dried apple slices, chopped, reserve a few slices to cut for fingernails
  • 8-10 Whole almonds, for fingernails
  • 1 tsp Spirulina powder, for decorating
Instructions
  1. Line a pan or tray with parchment paper and set aside.

  2. Place all ingredients into a mixing bowl except reserved dried apple, whole almonds and last tsp of spirulina, mix until combined.

  3. Cut reserved apple slices into fingernail size pieces.

  4. Shape cookie dough into finger shapes and press an apple piece at end for Goblins or an almond for witch fingers. Place 1 tsp of spirulina into a small dish and dip a toothpick into it, mark knuckle lines on fingers with dipped end. Place on prepared tray and continue with the rest of the dough until finished.

  5. Chill in the fridge for a few hours to firm up before serving. Keep any extras stored in the fridge, but they do pack well in a lunch.
