Copycat Trader Joe's Honey Sesame Cashews

Better than Trader Joe’s Honey Sesame Cashews!!🙌 A bold statement, but after Justin tried these those were his first words! We used to buy the kind from Trader Joe’s for snacks, holiday parties, platters, etc. (and we were completely addicted). But after my family cut out cane sugar completely, we were disappointed when we realized these were off limits…I needed to make a homemade version ASAP!

It only took me one try and these honey sesame cashews were a hit! My family eats the whole batch in one day, and if we turn our backs, Stormy will eat them all himself!! He has claimed these are his favorite thing in the whole world💛

Course: Snack
Cuisine: Gluten free, Paleo
Keyword: easy, fast
Servings: 8
Ingredients
  • 2 cups Dry roasted, unsalted cashews
  • 1/4 cup Honey
  • 2 tbsp Butter
  • 1 tbsp Tahini
  • 2-3 tbsp White sesame seeds
  • 2-3 tbsp Black sesame seeds
  • 2 tbsp Macaroon coconut
  • 1 tbsp Coconut sugar
  • 1/2 tsp Maldon Flaky Salt
Instructions
  1. Preheat oven to 350° and line a sheet pan with parchment paper.

  2. Combine honey, butter and tahini in a sauce pan and heat over low heat until combined, stirring constantly.

  3. Place cashews into a bowl and pour ingredients from sauce pan over top. Stir to coat.

  4. In a small bowl, combine remaining ingredients and sprinkle over cashew mixture.

  5. Pour out onto prepared sheet pan, using a spatula to get all the goodies! Be sure to spread them out so they get nice and crisp.

  6. Bake for 12-15 minutes, stirring once or twice in between. Remove from oven when they look nice and golden and the topping is bubbly. Stir once more after you remove them from the oven and let cool completely.

  7. Enjoy! Store any leftovers in a sealed container or zip lock bag. They will last several days, if you don't eat them all first!
