Meteor Balls -AKA No Bake Gluten Free Twix
A healthy, NO BAKE(!), gluten free, refined sugar free, vegan twix ball!!! So easy to make and SO HARD TO STOP EATING!!! Taste even better frozen!
If there’s a club for kids who were obsessed with Twix bars growing up, add me to it🙋 And if you’re not in that club, something is seriously wrong with you and we just can’t be friends…j/k, but really, I can’t relate🤣 These days my diet looks a whole lot different, and although it’s been over a decade since I’ve eaten a store bought Twix bar, this SUPER easy no bake healthy version hits all the marks, and they taste even better than I remember!! If you make one treat for Halloween this year, let it be these!! They are refined sugar free, gluten free, vegan, and aaalmost paleo.
My son Stormy said he thought we should call this healthy twix creation “Meteor Balls” while we were making them, and we all agreed that name rocks. Out with the Twix, in with the Meteor Balls!
So What’s the Secret to No Bake Twix?
- We used Trader Joe’s Crispy Crunchy Mochi rice nuggets for the “cookie” center!!! Works better than we imagined and no cookie baking required! Plus, they are made from rice, making them naturally gluten free and sugar free.
- The caramel layer is a no cook date caramel, you just throw all the ingredients in a food processor and blend them up. And it didn’t even stick to my hands during assembly!! (my kids got a little sticky, but they were licking it😆)
- No cutting, baking, or boiling required.

- 10-12 Crispy Mochi Rice Nuggets
- 100 grams Medjool dates
- 2 tbsp Coconut nectar
- 1 tbsp Carrington Farms Vanilla coconut spread
- 1 tbsp Sunbutter
- 1 tbsp Almond butter, smooth
- 1 tbsp Butter or Coconut oil for dairy free/vegan, softened
- 1/2 tsp Maldon Sea Salt Flakes
- 1 Bar Montezuma's 100% Dark Chocolate, chopped
- 1 tsp Coconut oil

Add everything to a food processor and pulverize until well combined and smooth. Alternatively, if you don't own a food processor you can chop the dates into a paste on a cutting board and then mix everything in a standing mixer.

Cover a tray or small sheet pan with parchment paper.

Use a spoon to scoop up a bit of the date caramel and press around a piece of mochi, roll between your hands into a ball shape and place on tray, continue until caramel is gone.

Place tray in freezer for about 30 minutes, or until caramel layer is firm.

In a small saucepan, combine chopped chocolate and coconut oil, melt over very low heat stirring constantly.

Using a fork, dip twix balls into chocolate and place back on tray, sprinkle with a bit more flaky sea salt if desired. Continue until all the twix balls are dipped.

These taste AMAZING frozen and they are so hard to stop eating! Enjoy!
